Sfinge di San Giuseppe
/There are as many sfinge recipes as there are/were/will be Sicilians. This is one of my favourites. ~Rue
- 1 lb ricotta
- 1/2 cup sugar
- 1 tsp vanilla
- 6 eggs
- 2 cups flour
- 2 tsp baking powder
- pinch of salt
Combine all the wet ingredients in one bowl and mix until smooth.
Combine the flour, salt, and baking powder and sift.
Add the wet to the dry ingredients and blend well.
Allow batter to rest for 30 minutes.
Heat oil to 370 degrees.
Drop mixture by tablespoons a few at a time.
Remove from oil when they reach a golden brown.
Drain on a rack with a plate underneath.
Sprinkle with confectioner's sugar, cinnamon sugar or honey.
Best when served warm. Enjoy!!!
